Peas
Varieties: Sugar Ann (Sugar Snap), Oregon Sugar Pod (Snow), Mr. Big (Shelling)
Peas are a high protein, high carbohydrate and high fiber food. The also contain vitamins and minerals such as vitamin K and iron.

Strawberries
Varieties: Honyoe, Eros, Ovation
Strawberries are high in potassium and vitamin C. They also have a high water content and thus makes them fragile and have a short shelf life. To keep strawberries best store in the refrigerator and DO NOT wash or cut until ready to eat. The berries are sandy so please wash before eating.

Radishes
Varieties: Easter Egg, Champion
The radish bulb is surprisingly 94% water and contains some potassium, phosphorous, magnesium and iron. The greens, when not pre-eaten by flea beetles, are an excellent source of A, C and B vitamins.

Garlic Scapes
Variety: German Stiffneck
Garlic scapes contain iron, calicum and vitamin C; they are also high in carbohydrates.

Kohlrabi
Varieties: Prurple Kohlrabi, Winner
Kohlrabi contains lots of fiber, calcium, potassium and vitamins A and C.

Spinach
Variety: Space
Spinach is high in chlorophyll, Vit.A, Vit.C, and contains many valuable minerals. However because it is high in oxalic acid it does tend to bind the naturally occurring calcium and prevent its absorption.

Broccoli
Variety: Pacman
Broccoli is loaded with vitamin A. C, calcium, potassium, and iron. Broccoli is also touted as an "anti-cancer" vegetable due to a special enzyme called sulforaphane.
