Sweet Corn
Variety: Illini Extra Sweet
CORN offers a significant amount of vitamin A, B-complex, phosphorous, and potassium, along with vegetable protein. As many traditional native dishes will illustrate, corn combined with most beans or dairy form a complete protein. Like other whole grains, corn is an excellent source of complex carbohydrates.

Tomatoes
Varieties: Sunoma, Paragon, JTO99197, Super Sweet 100, Sweet Olives, Heirlooms
Tomatoes are high in vitamin A and of course because of the red are a good source of lycopene. And because we frequently concentrate tomatoes in sauce or paste they become very concentrated sources so perhaps the kids are right about pizza? For right now just enjoy them au natural.

Tomatillos
Variety: Puebla Verde
Tomatillos contain significant amounts of vitamin A, C and potassium. They also have some vitamin K, folate, phosphorus and magnesium.

Leeks
Variety: Lancelot
Leeks are high in potassium and calcicum and also contain some iron, magnesium and phosphorus.

Sweet Peppers
Varieties: Mingle Mix, Red Knight, Excel, Snapper
PEPPERS are nutritionally significant. High levels of vitamins A, C, and E and the minerals iron and potassium characterize most varieties.

Hot Peppers
Varieties: Aruba, Stoked, Chile
Capsaicin produces the pungency of hot peppers. This substance is soluble in alcohol and milk but not water, which may explain why hot Indian dishes are frequently accompanied by yoghurt o and perhaps a beer. Most of the intensity of a hot pepper reside in its’ seed and inner ribs. Remove these to reduce heat, but retain them in cooking for full blast. Always take precautions when preparing hot peppers. Eggplant

EGGPLANT is low in calories and high in fiber, and offers very small amounts of vitamins and minerals. It is traditionally eaten with other, more nutritious foods. So for those of you who aren’t fond of eggplant, I guess we can’t guilt trip you into eating it for its’ exceptional nutritious value. But for the rest of us it’s just plain delicious, no more reason needed than that.

MELONS Did you know that cantaloupe has over 14,000 IU of vitamin A? And it is also high in potassium, folic acid, magnesium, and calcium. What a great way to take your vitamins.

Bok Choy
Variety: Mei Qing Choi
Bok Choy is a traditional stir-fry vegetable from China. It is a great nutritional gift and often touted as the garden vegetable highest in calcium after the greens. It is an excellent source of vitamins A, B-complex, and some minerals. All of this for only 24 calories per one-cup serving.
